• ½ cup tapioca starch

Steps:
- Position a rack in the center of the oven and preheat to 350 degrees fahrenheit. Grease a 4.5×8-inch loaf pan.
- Mash the bananas with a fork in a small bowl, then set aside.
- In a large mixing bowl, combine the sugar, oil, and eggs. Beat with a hand mixer for 3 minutes. Add the mashed banana and coconut milk.
